Pumpkin Oat Cookies
Gather
  • 2 cups all-purpose flour
  • 1 1/3 cups quick or old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup pumpkin
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
Go
  1. Preheat oven to 350 degrees F and grease baking sheets.
  2. Combine flour, oats, baking soda, cinnamon and salt in medium bowl.
  3. Beat butter, granulated and brown sugar in large mixer bowl until light and fluffy.
  4. Add pumpkin, egg and vanilla extract. Mix in dry ingredients.
  5. Stir in raisins.
  6. Drop 1/4 cup of dough onto the baking sheet and spread into a 3-inch circle. Repeat with remaining dough.
  7. Bake for 14 to 16 minutes until cookies are firm and lightly browned.
  8. Cool on baking sheets for 2 minutes, then remove to wire racks to cool completely.
