Crunchy Lemon Snow Bars
Gather
  • 1/2 cup butter
  • 1/2 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 lemon
  • 2 eggs
  • 3/4 cups sugar
  • 1/2 teaspoon salt
  • 1 cup coconut
  • 1 cup pecans, chopped
  • powdered sugar
Go
  1. In a small bowl, blend butter and brown sugar until smooth. Cut in flour and press into the bottom of an ungreased 9-by-13-inch pan.
  2. Bake for 10 minutes at 350 degrees F and remove from oven.
  3. Grate the lemon for 2 teaspoons of lemon peel, and squeeze for 2 tablespoons of lemon juice.
  4. Beat the eggs in a mixing bowl and add sugar, lemon peel, lemon juice, salt, coconut and pecans.
  5. Pour mixture over baked crust and return dish to oven. Bake for 25 minutes.
  6. Cool slightly and sift powdered sugar over top. Slice into squares to serve.
