Delicious Date and Lemon Slices

Gather
  • 1 small lemon (grated rind and juice)
  • 2 cups chopped dried dates
  • 6 tablespoons water
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups white flour
  • 1 1/2 cups rolled oats
  • 1/2 cup brown sugar
  • 1 cup melted butter

Go

  1. Squeeze the juice from the lemon and grate off its rind.
  2. Put the dates, water, lemon rind and juice into a saucepan.
  3. Heat gently, stirring occasionally, until the mixture is soft.
  4. While the mixture heats, make the base by combining the remaining ingredients in a bowl. Sprinkle half the mixture into a 9-by-11-inch shallow cake pan. Press down well!
  5. Pour in the date mixture. Sprinkle the remaining oat mixture on top and press down firmly.
  6. Bake at 400° F for 20 minutes. Let cool in pan and then cut into slices.
