Delicious Date and Lemon Slices

- 1 small lemon (grated rind and juice)
- 2 cups chopped dried dates
- 6 tablespoons water
- 1 1/2 cups whole wheat flour
- 1 1/2 cups white flour
- 1 1/2 cups rolled oats
- 1/2 cup brown sugar
- 1 cup melted butter
Go
- Squeeze the juice from the lemon and grate off its rind.
- Put the dates, water, lemon rind and juice into a saucepan.
- Heat gently, stirring occasionally, until the mixture is soft.
- While the mixture heats, make the base by combining the remaining ingredients in a bowl. Sprinkle half the mixture into a 9-by-11-inch shallow cake pan. Press down well!
- Pour in the date mixture. Sprinkle the remaining oat mixture on top and press down firmly.
- Bake at 400° F for 20 minutes. Let cool in pan and then cut into slices.
