Cinnamon Chips and Fiesta Fruit Salsa

Fiesta Fruit Salsa

Sweet, juicy and refreshing. Prepare salsa first so it can chill while you bake the chips.

Gather

  • 2 kiwis
  • 1 pound fresh strawberries (about 1 1/2 cups)
  • 1 Golden Delicious apple
  • 1/2 cup canned pineapple tidbits or crushed pineapple
  • 1/4 cup strawberry or raspberry jam
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar

Go

  1. Peel and dice kiwis.
  2. Wash strawberries, remove stems and dice.
  3. Wash, core and dice apple.
  4. Drain pineapple.
  5. In a large bowl, combine all fruits.In a small bowl, combine sugars and fruit jam.
  6. Add sugar mixture to fruit and mix well.
  7. Cover and chill in the refrigerator for at least 15 minutes.
  8. Serve with Cinnamon Chips or as a topping for ice cream.

Cinnamon Chips

Crisp and tasty!

Gather

  • 4 6-inch flour tortillas
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • butter-flavored cooking spray

Go

  1. In a small cereal bowl, stir together cinnamon and sugar.
  2. Spray both sides of each tortilla with cooking spray.
  3. Cut tortillas in half; then cut each half into four pie-shaped chips.
  4. Dip chips into cinnamon and sugar mixture.
  5. Place chips in a single layer on a large cookie sheet.
  6. Bake at 350° F for 8 to 10 minutes, until lightly browned and crisp.
  7. Remove carefully from oven. Cool and serve with Fiesta Fruit Salsa.
