Barcelona Berry Bars

2 cups quick rolled oats
2/3 cup coconut (optional)
1/2 cup chopped peanuts or pecans
1/3 cup melted butter
2 tablespoons honey
1/2 cup raisins or other dried fruit
1/3 cup brown sugar
1/2 cup flour
1 egg

1 teaspoon vanilla


1. Preheat oven to 350° F.
2. Mix all ingredients together in a large bowl.
3. Pour into a 9-by-13-inch baking pan. Press down firmly to create a smooth surface.
4. Bake for 25 minutes or until brown. Let cool.
5. Serve with lowfat milk or juice.
