Green Pea Salad

16-ounce package frozen petite peas
3 slices cheddar cheese, 1/4-inch thick
1 tablespoon bacon bits
1/3 cup finely chopped celery (1 stalk)
1 green onion, finely minced
1 teaspoon rosemary (optional)
1/3 cup mayonnaise
1 tablespoon milk
1 tablespoon sugar


1. Place frozen peas in a strainer. Run warm water over peas until thawed. Place drained peas in a large bowl.
2. Cut cheese into 1/4-inch cubes; add to peas.
3. Mix in bacon bits*, celery, onion and rosemary.
4. In a small bowl, stir together mayonnaise, milk and sugar to make a dressing.
5. Add dressing to peas and mix. Chill until ready to serve.
*Variation: Instead of bacon bits add 1/2 cup small cubes of ham.
