Jelly Tart Cookies

1/4 cup jelly: strawberry, grape or apricot
1 cup (2 sticks) butter, softened
3/4 cup sugar
1-3/4 cup flour


1. Preheat oven to 350 degrees F.
2. Spoon jelly into a small bowl and stir until smooth. Set aside.
3. In a large bowl, beat butter and sugar until the mixture is light and fluffy.
4. In a separate bowl, mix flour with a pinch of salt. Add dry ingredients to the butter mixture and blend until a dough forms.
5. Pinch off bits of dough and roll into 1-inch balls. Place on a baking sheet about 1 inch apart.
6. Press your fingertip into the center of each cookie to make a well (the dough may crack around the edges—you can pinch it back together). Fill each well with a small amount of jelly.
7. Bake for 10 minutes. Remove cookies to a wire rack to cool. Makes about 3 dozen cookies.
